
Parmesan Garlic Truffle Potatoes

Ingredients
1 Tbsp Truff truffle infused olive oil
1 Tbsp garlic infused olive oil
1 pound fingerling potatoes, sliced lengthwise
Salt and pepper to taste
Freshly grated parmesan cheese
1 Tbsp chopped fresh parsley
Directions
- Pre-heat oven to 400 degrees F.
- Line a sheet pan with parchment paper and add the sliced potatoes.
- Drizzle on both oils and toss until evenly coated. Place the potatoes cut side down on the baking sheet, making sure they’re as evenly spaced out as possible.
- Season with salt and pepper.
- Bake for 35-40 minutes, or until the potatoes are tender and starting to get crispy.
- Remove from the oven and add the parmesan and fresh parsley. Drizzle on any extra Truff oil if your heart desires.
- Allow to cool for at least 5 minutes before eating.
- Store any leftovers in an airtight container in the fridge for up to 5 days.
