Parmesan Garlic Truffle Potatoes

1 Tbsp Truff truffle infused olive oil

1 Tbsp garlic infused olive oil

1 pound fingerling potatoes, sliced lengthwise

Salt and pepper to taste

Freshly grated parmesan cheese

1 Tbsp chopped fresh parsley


  1. Pre-heat oven to 400 degrees F.
  2. Line a sheet pan with parchment paper and add the sliced potatoes.
  3. Drizzle on both oils and toss until evenly coated. Place the potatoes cut side down on the baking sheet, making sure they’re as evenly spaced out as possible.
  4. Season with salt and pepper.
  5. Bake for 35-40 minutes, or until the potatoes are tender and starting to get crispy.
  6. Remove from the oven and add the parmesan and fresh parsley. Drizzle on any extra Truff oil if your heart desires.
  7. Allow to cool for at least 5 minutes before eating.
  8. Store any leftovers in an airtight container in the fridge for up to 5 days.
