Ok how beautiful is this parfait?! I almost don’t even want to eat it. Allllllmost. But hunger always prevails hehe. I was off the yogurt train for a while because I couldn’t seem to find a good dairy free alternative that I liked at the grocery store near me, but I’ve been trying to reintroduce a little dairy lately to see how it makes my body feel and let me tell you, my taste buds are happy campers!! But there are also SO many incredible dairy free yogurts out there that are just as delicious (my absolute FAVE is Kite Hill’s Almond Milk Yogurt, it’s UNBELIEVABLE) that you could use for this recipe.
The only thing I recommend when buying yogurt is to check ingredients because flavored yogurt is sneaky and likes to hide oodles of sugar and other added ingredients that are really just unnecessary and not good for you. I typically go for a plain yogurt with ingredients that consist only of the dairy or dairy alternative, culture or probiotics, and some sort of starch as a thickener if it’s a dairy free yogurt. Anything beyond that we can do without.
But Bailey, who wants to eat PLAIN yogurt? Ew. Ohhhh but plain yogurt is the best because it’s a blank canvas! You want sweet vanilla? Add a little vanilla extract and maple syrup. You want fruit? Make a little berry compote from frozen berries. Really, the options are endless!!! Orrrr just make this delicious parfait and you will be happy as a little clam, I promise you.
Dairy and Gluten Free Banana Blueberry Yogurt Parfait
- 1 cup of plain yogurt
- 1 tsp maple syrup
- a few drops of vanilla extract
- ¼ tsp cinnamon
- ½ banana, sliced
- a handful of blueberries
- ¼ cup of your favorite granola (I use homemade maple cinnamon granola)
- Add the plain yogurt, maple syrup, vanilla extract, and cinnamon to a bowl and stir to combine.
- Top with banana, blueberries, and granola. Enjoy!
